What is escamol?

Scientific name:Liometopum apicolatum

Escamoles are the eggs or immature state of the ant liometopum apicolatum. It reproduces in arid areas with xerophytic or cacti vegetation on which it feeds. They can be found at heights ranging from 1500 to 3000 meters above sea level. They are considered a Gourmet ingredient due to their mild flavor and the difficulty of collecting them.

When the earth awakens
and the sun kisses the agave,

Escamol heralds spring,
white jewel under the root;
The chicatana worm arrives with the rain,
brief messenger of the gray sky.

The grasshopper dances among the cornfields,
light as the passing wind;
and in the heart of the maguey,
the worm keeps silent
the ancient fire of the ancestral agave.

Every insect has its own time,
Every climate brings its own gift,
each season raises its song
on the land that has fed us.

Escamoles, grasshoppers, chicatanas
and maguey worms
They are a living memory of Mexico,
food of our grandparents,
sacred heritage of the land
and eternal song of our past.
