What is escamol?

Scientific name:Liometopum apicolatum
Escamoles are the eggs or immature state of the ant liometopum apicolatum. It reproduces in arid areas with xerophytic or cacti vegetation on which it feeds. They can be found at heights ranging from 1500 to 3000 meters above sea level. They are considered a Gourmet ingredient due to their mild flavor and the difficulty of collecting them.
